Asian Turkey Meatballs




Ingredients for the Meatballs
1/4 cup panko bread crumbs
1-1/4 lbs 93% lean ground turkey
1 egg
1 tbsp ginger
1 clove garlic, minced
1/2 tsp salt
1/4 cup chopped fresh cilantro
3 scallions, chopped
1 tbsp low sodium soy sauce
2 tsp sesame oil

Ingredients for the Dipping Sauce
4 tbsp low sodium soy sauce
2 tsp sesame oil
2 tbsp fresh lime juice
2 tbsp water
1 chopped fresh scallion

Preheat oven to 500°. Combine all the Ingredients for the Meatballs and mix well using your hands. Using about 1/4 C. meat, shape into approx. 12 meatballs and set in a baking dish. Bake for 15 minutes.
Next, whisk together all the Ingredients for the Dipping Sauce and drizzle about one tablespoon over meatballs before serving - use the rest as dipping sauce.
