1 Lb. Red Potatoes (cubed)
1 Pkg (14oz.) Smoked Kielbasa
1/2 C. Red Onion (chopped)
4 Tbsp. Brown Sugar
4 Tbsp. Cider Vinegar
2 Tbsp. Dijon Mustard
1 Tsp. Dried Thyme
1/2 Tsp. Pepper
Place cubed potatoes in a microwave-safe dish in 3 tbsp. of water. Cover and microwave for 5 minutes or until tender and drain. Cut kielbasa into 1/4 in. pieces and saute in olive oil with onion over med. heat until onion is tender. Add cubed potatoes and saute 3-5 minutes or until kielbasa and potatoes are lightly browned. In a seperate bowl, combine brown sugar, vinegar, mustard, thyme and pepper - stir into skillet and bring to a boil. Reduce heat and simmer, uncovered for 2-3 minutes or until heated through. Serves 4.
