Cilantro Lime Shrimp and Rice



For the Shrimp: (make about 1/2 lb. per person)
2 tsp olive oil
2 lb shrimp, shelled and deviened
6 cloves garlic, crushed
1/2 cup chopped fresh cilantro
1 lime
 salt and pepper

Heat a large frying pan on medium-high heat. Add oil to the pan, when hot add shrimp. Season with salt and pepper. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Sauté another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot.


For the Rice:
1 cup extra long grain rice or basmati rice
1/2 lime
2 cups water
1 tsp salt
3 tbsp fresh chopped cilantro
3 tsp vegetable oil

In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off heat and keep covered an additional 5 minutes.

In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
