Pear & Gorgonzola Salad


5 oz. Arugula or Spring Mix Blend
2 Pears (peeled and thinly sliced)
4 oz. Gorgonzola or Blue Cheese
1/2 C. Dried Cranberries
1/2 C. Walnuts (optional)

Dressing:
3 Tbsp. Olive Oil
Juice of one Lemon
1 Tsp. Honey
Salt and Pepper to Taste


Combine first 5 ingredients in a large salad bowl, then whisk together ingredients for the dressing and toss together with salad just before serving.
