Ham and Potato Quiche

4 Small Red Potatoes, cubed
1 Tsp. Dried Rosemary
1 C. Cubed Ham
1 C. Shredded Monterey Jack or Cheddar Cheese
3 Eggs
1 C. Milk
1/2 tsp. Salt
1/2 tsp. Pepper
1 (8 or 9-inch) premade pie shell in foil pan OR make your own



Preheat oven to 400 degrees.

Place potatoes and rosemary in a microwaveable dish. Cover with a damp paper towel and microwave for 2 minutes, until almost cooked through.

Cover the bottom of the pie shell with potatoes, ham, and cheese. (If you are using a premade pie crust, place foil pan on a cookie sheet before baking).

In a medium bowl, whisk together eggs, milk, salt and pepper and pour over the ham, potatoes and cheese.

Place quiche into preheated oven for 35 to 40 minutes or until eggs have set.
